One big card or multiple smaller ones?

When I bought my camera, I got a 2GB card with it. After the first time I filled that up in a day/weekend, I bought one twice as big - 4GB. I did the same when I filled the 4GB card - went out and bought an 8GB card. So now I have a 2GB, 4GB, and 8GB. I have never filled the 8GB - but if I do, I have 6 more GB of space available. I never really worried much about the card failing (and I have never had one fail) - I was always more worried about the capacity. I didn't want to just go out and buy the biggest one though, because that seemed wasteful.
