I am looking to buy a photography book for my fiance. We go hiking and camping a lot and she takes awesome pictures. She has done some reading to educate herself and knows general principles. I was looking for an intermediate photography book to help her take that next step. I have no idea where to even begin, so I was hoping maybe someone could help me out. Thanks in advance for any replies.

I second Keith's suggestion for the Photographer's Eye.
 
The Digital Photography Book by Scott Kelby is a very good, easy read. He lays things out like you're there shooting with him instead of giving you a whole bunch of technical info.
