Upscalling software was mentioned in a thread on stock photography. Is upscalling software a decent substitute for not having a FF?

Different things.

Upscalling software will give you a larger images, as in more pixels.
A camera with a full frame sensor may give you more pixels than a camera with a small sensor, but not always. The original 5D is only 12MP, and there are APS-C sensor cameras with 17MP.

When you upscale, you loose quality. No getting around that, but you can usually get quite a bit larger, without too much loss. But if you had a camera that gives you more MP (and high quality lenses to take advantage of that), then the camera would (probably be a better option than upscalling from a lower MP camera).

However, you need to consider why you would want to upscale. The only reason I can think of, is to make larger prints. But the thing about large prints, is that they aren't meant to be viewed up close, so you can usually get away with lower resolution (printing without upscalling).

Photographers have been making large prints from 6-8MP cameras for years. Sure, more MP is nice for larger prints...but don't over think it.
