In the very near future I will be upgrading from a Canon XT to either a t1i, t2i or t3i... I'm having a little trouble making up my mind which would be the better one to go with. As far as budget goes they are all so close in price that it's not really an issue. My question is would I be missing anything really special if I didn't get the newest version of this camera?

If money isn't really an issue I don't see why you wouldn't go for the T3i. As for the differences, the T2i and T3i are VERY similar. From what I've read, the T3i is better at doing video so if you plan on using your DSLR for then the choice is clear. I went with the T2i because I don't plan on doing much recording so the extra cost wasn't worth it.

Screaming blue is a way of life for us man... Sorry, I guess it just manifests itself in everything I do. Btw thanks for answering my question.

None. I wouldn't upgrade to another Rebel.. doesn't seem worth it to me in the long run.

I upgraded from an XTi to a T2i and I'm very happy with the better high-ISO performance and the larger screen. I didn't care about video or the swivel screen on the T3i so it wasn't worth the extra money to me.

If I were you I'd save up for the 60d. It has 9 cross type af points vs. the t3i's 1. This is better for tracking moving subjects and locking on focus. Also, it has a bigger viewfinder, and The video mode is amazing! Burst rate is higher and has digital zoom in video mode. Lastly its larger and fits better in the hand. In my opinion it is much better than the the T3i, and if you want to become serious about photography I would never buy another rebel.

As a couple have already pointed out, you may wish to think about where you plan to take your hobby. If you are, or will be fairly serious about the hobby, the 60D would probably make more sense for you. If you just want to take snaps, there's nothing wrong, IMO, with staying in the Rebel line. The differences between any of the three T series Rebs and the XT are huge. Not to confuse the issue, but glass is something to think about as well. What do you currently have for glass? To fully reap the benefits of a body upgrade, you need some good glass as well. Cheap, consumer lenses on a better body will yield pics that look like they were taken with cheap, consumer lenses.
