Much of it is in the scene that was photographed -- white walls, white ceiling, light floor contrasting with black clothing, black furniture, black mats on floor. Also plenty of light -- from several windows plus overhead lights. When you get a scene like that properly exposed and in sharp focus, you won't have to do much in post.
 
Therenis a lot more to it than cranking up the contrast or white walled here. Digital conversion of color photos uses software to replace the filters used to emphasize certain colrs and ranges. This is a good resource that will begin to explain the carols processes used to convert a digital color image to a black and white image that grabs attention.
