No longer a newbie, moving up!

-My mom and I drove around a bit yesterday and came across three massive eagles. Naturally I struggled to get my camera out, put a lens on and snapped some pictures and they weren't all I was hoping they would be.

-I also have some shots where it's flying away and they came out okay I thought. However, I run into a problem where its wings are in perfect focus, but it's head is not and vice versa. How would I go about correcting this next time I go to snap pictures? Or was it perhaps because I was in a hurry because I knew he was about to take off like the rest of the eagles?
-And last question. I have both Lightroom and Photoshop (I'm a lot more skilled in PS though, I've had LR for a week only) that I edit photos in, does anyone have a link/suggestions on how to edit animal pictures? I don't want to overdo it but I don't want them washed out either. Many thanks!
