Practice shoot, how did we do?

I like the last shot a lot but some more light on her face would have made it even better. My moniter is pretty dark though.
For the orange skin tones just select the skin and go to Hue/Saturation. Select reds and bring that saturation down just a tad. That should help make it look more natural.

We have been running into some problems when shooting in late afternoon or on rainy days with being able to stop down and keep a fast enough shutter speed.....

Try using a reflector.

We have been using a reflector. The problem seems to be that without much sunlight to reflect we aren't getting a lot of light on the subject's face. Maybe we need a more reflective reflector?
