if i have edited pictures in photoshop and set the size to 5x7 if the customer wanted bigger prints would they be all screwed up if they upsized them?

depends on how many pixels there are in the original image vs PPI and then you have to calculate how large they can go at 100 ppi which is is the lowest PPI you'd want in a picture or else it's gonna look bad. Let me know if further explanation is needed

That's a different aspect ratio so it would not work without some cropping.
