I have seen Michael Freeman's book at my bookstore. Is that a good one to start with? What other books are recommended to those interested in venturing into this style?

Ansel Adams "The Negative" and "The Print" are the basic textbooks here. You'll have to do some work to understand them in digital terms, but it's worth doing.

Not that everyone wants to be, or should want to be, Ansel Adams, but if you grasp his system you'll have the tools to do anything you want.

I am pretty much a beginner. Are his books easy to understand for novices?

I don't think they're particularly hard, no. It's has hard as it needs to be, I think. If you have convenient access to a library, I would suggest borrowing them (or any other book that you think might suit you) first.
