What would you recommend?

I have a Nikon D5100 too, and I love it. I have taken it on a driving cross country driving trip, and also on cruises....it works great in any situation and I have added the zoom 70-300 mm lense, the composition lense wide angle, and a 50 mm prime 1.8g and the regular kit lens that came with it....I love that now it's much cheaper now that the 5200 and 5300 have come out, and it takes beautiful pictures. You won't be sorry!
