You don't really need an 18% gray to expose correctly with a digital camera though;
1. Take a test shot of the scene
2. Check the histogram, too bright? too dark?
3. Adjust Ev +/- compensation
4. Reshoot

I like the images, great first post :)
I think 2# would work great with detail in the sky, or maybe just crop it away?

The water stream one has potential to be fantastic if you could have opened the shutter for longer resulting in a bluffed, waife-like stream instead of a halfway blurred choppy stream

how would i go about making the photos less exposed? i mean for future shots not these ones. ive been messing around with my S and A functions but i dont really know what im doing, i feel like i usually let in too much light or not enough? cant seem to find a good balance with the adjustment knobs
 
Pick up a book called "Understanding Exposure" by Bryan Peterson. Great read. Easy to read. Easy to understand. Get it new, used or from the library. Just get it.
