Skieur may be correct about the letter of the law regarding taking the pictures BUT you are most certainly going to need signed consents should you ever want to publish them.

Not true. Consents are necessary ONLY if the photos are used for advertising purposes. I have had shots of minors published in a national newspaper without consents and the law is NOT different in Canada from the US in that respect.
